Chicken - either boneless or bone-in
1 can corn (drained)
1 can black beans (drained)
1 - 2 cups cooked rice
1 - 2 ounces cream cheese
1/2 cup or more salsa verde
2 tsp cumin
2 tsp garlic powder
2 tsp chili powder
shredded cheese - pepper jack, Monterrey, or whatever you like
Optional: green chiles, lime, cilantro, sour cream, red bell pepper

Preheat oven to 350º F
You can adjust any of the ingredients to your personal tastes and needs. The following instruction will serve 2 - 4 people.

Make a rub of equal parts cumin, garlic, chili powder (or adjust to your taste).
Dredge the chicken through the rub on both sides
Place chicken in the center of a baking dish approximately 7" x 11" If using boneless chicken, pound it until it is of uniform thickness
Put the corn along one side of the chicken and the black beans on the other.
Place the cooked rice at both ends.
Add optional green chiles and/or red bell peppers if desired.
Cut small slices of cream cheese (think butter pats) and place on the chicken.
Spoon salsa verde over the chicken generously.
Cover and bake for 30 - 50 minutes, depending on the thickness of your chicken.
Toward the end, check for doneness and top with shredded cheese. If you are adding lime or cilantro, now would be the time. Return to oven until cheese is melted.
