* 4 pounds potatoes(about 8 medium) peeled & cubed
* 2 pounds of ground beef
* 4 cups chopped onions
* 3 cloves of minced garlic
* 2 cans (151/2oz) whole kernel corn drained or(see note 3)
* 1 1/2 cups barbecue sauce
* 12oz cream cheese softened
* 1/4 cup butter cubed
* 1 tsp salt
* 1/2 tsp pepper
* 1 1/2 cups shredded cheddar cheese

Place potatoes in a sauce pan and cover with water
Bring to a boil ,reduce heat and cook for 10 or 15 minutes, or until potatoes are tender.
Meanwhile cook beef, onions and garlic in a fry pan or sauce pan until meat is no longer pink, drain off fat. Stir in the corn and barbecue sauce. Drain potatoes; mash with cream cheese, butter, salt and pepper. Spoon the meat mixture into three greased 8x8 baking pans or dishes. spread the mashed potatoes over the meat and sprinkle with the cheddar cheese.
Bake uncovered at 350*f for 25 to 30 minutes or until golden brown and bubbly. Serve hot. Or skip the baking and cool the pies,cover and freeze them for up to 4 months.
This recipe freezes well.
To use the frozen casseroles : thaw them in the refrigerator overnight . Remove from the refrigerator 30 minutes before baking. Bake covered for 1 1/2 hours (depends on pan size) or until bubbly. Uncover and bake 5 or 10 minutes longer to brown a little.

1)you can substitute sweet potatoes for regular potatoes.
2)You can substitute ground turkey or ground pork for the beef.
3) you can substitute a 16oz package frozen mixed vegetables for the canned corn.
4) The pan sizes can be changed to your needs. We use 1 9x13 and 1 8x8 or divide it up using 4x8 aluminum throw away loaf pans for two people. Any pan size pans can be used as long as the square inch area is near the original total. Pans should be about 2 inches deep. The meat mixture will be 3/4 to 1 inch deep and the potatoes about the same.
5) We double and triple the recipe often.
