1/3 c chopped green pepper
3 minced onions
1/2 c olive oil
1 clove garlic minced
1/2 c wine vinegar
1 c tomato soup
1 1/2 - 2 cups of seafood (shrimp, scallop, clams) chopped
2 c uncooked rice
Water as needed

Directions:
Directions:
Brown the onion, peppers and garlic in olive oil. Add vinegar and soup when vegetables are soft. Add the seafood and let cook for about 2 minutes. Add in rice and let cook about 15 minutes, adding water if you see the rice is becoming dry.
