2 c sugar
2 c flour
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1 1/2 c vegetable oil
1 c crushed pineapple
2 c grated carrot
3 eggs
1 1/2 c chopped walnuts
2 tsp vanilla

Cream Cheese Frosting
8 oz softened cream cheese
1 box confectioners sugar
1 tsp vegetable oil
1 tsp vanilla
2 tsp milk

Directions:
Directions:
Preheat oven to 350º. Grease and flour 2 8" cake pans.
Mix dry ingredients until combined, add oil and vanilla. Beat in eggs one at a time. Stir in pineapple, nuts and carrots. Pour in pans. Bake for 60-70 minutes.

Frosting
Cream all ingredients until smooth. Frost when cakes are completely cooled.

My dad and son's favorite! She often topped this with shredded coconut. Many a wedding and bridal shower featured this yummy cake on the mile long dessert table!
