2/3 c butter
2/3 c flour
3 1/2 c milk
3 1/2 c water
4 large baking potatoes (baked, cooled, and cubed - about 4 cups)
4 sliced green onions (extra for garnish)
12 bacon slices, cooked and crumbled (3-4 slices minced, the rest crumbled)
1 1/2 c shredded cheddar cheese (extra for garnish)
1 c (8 oz) sour cream
3/4 tsp salt
1/2 tsp pepper

Directions:
Directions:
In a large kettle melt butter. Stir in flour; heat and stir til smooth. Gradually add milk and water, stirring constantly til thick. Add potatoes and onions and bring to a boil stirring constantly. Reduce heat and simmer 10 minutes. Add remaining ingredients (only the minced bacon, not the crumbled part!) and stir until cheese is melted.

Right before serving, add a few pieces of crumbled bacon and stir into bowl of soup. You can add all of the bacon during the last step, but it will get soggy.

Top soup with cheese, crumbled bacon, and green onions.
