½ cup canola oil
1¼ cup brown sugar
1 egg
2 tsp. vanilla
1 cup buttermilk
1½ cups rhubarb, diced
½ cup walnuts
½ tsp. salt
2½ cups whole wheat flour
1 tsp. soda
1 tsp. baking powder

Directions:

In large mixing bowl, cream together oil, brown sugar, egg, vanilla and buttermilk with wire whisk. Stir in
rhubarb, nuts and salt. Add flour, soda and baking powder. Fill cupcake pan with muffin liners. Pour batter into liners until they are ⅓ full.
TOPPING
In small mixing bowl, mix ⅓ cup sugar and 1 tsp. cinnamon. Cut in 1 tsp. butter. Top muffins with mixture.
Bake 25 minutes at 375º. Makes 2 dozen muffins.
