2 eggs, slightly beaten
1 can (16 oz.) solid pack pumpkin
¾ cup sugar
½ tsp. salt
1 tsp. cinnamon
½ tsp. ginger
¼ tsp. cloves
1⅔ C. (13 fl.oz) evaporated milk or light cream
1 9-inch unbaked pie shell

Preheat oven to 425º. Mix filling ingredients in order given. Pour into pie shell. Bake at 425º for 15 minutes. Reduce heat to 350º and continue baking for 45 minutes or until knife inserted near center comes out clean.
 

Plain Pastry Single Crust

1 1/2 cups sifted all-purpose flour
1/2 tsp. salt
1/2 cup shortening
4 to 5 T. cold water

Directions:

Sift flour and salt together. Cut in shortening until pieces are size of small peas. Sprinkle water over 1 T. at a time, tossing mixture after each addition. Form into ball, flatten on lightly floured surface. Roll 1/8 inch thick from center to edge.
