2 C cream
2 vanilla beans (split the long way)
5 egg yolks
1/2 C sugar (plus more for topping)

Directions:
1. Preheat oven to 325 ºF.
2. Cook the cream and vanilla in saucepan over medium high heat until a few bubbles rise to the surface. Cool 5 minutes.
3. Beat and egg yolks and sugar together until light yellow.
4. Pour a 1/4 of cream mixture into egg mixture. Then pour the sugar/egg mixture into the cream and stir.
5. Pour into four 6 oz ramekins or six 4 oz ramekins .
6. Place the ramekins in baking dish and fill the dish with water to reach 1/2 way up the sides of the ramekins. Then cover with foil.
7. Bake for 30-45 minutes or until the center is barely set. Cool or Chill.
8. When you are ready to serve cover the top of each custard with sugar and heat it with a flame of a propane torch or run it under the broiler... until the sugar bubbles or browns.
