1Tbs. unsalted butter
3 cloves garlic minced
2 shallots chopped fine or ⅓ cup chopped onions
salt
pepper
pinch of nutmeg
12 oz. bag of spinach
⅓ cup plain Greek Yogurt
1 tea. cornstarch

Directions:
Directions:
Heat large nonstick skillet over medium heat. Add butter. when melted add garlic and shallots. Season with salt and pepper and nutmeg. Cook stirring often about 4 minutes. Raise heat to high and add half the spinach. Lightly season with salt and pepper. Toss and stir as it cooks down. When there is enough room add the remaining spinach. Continue to cook, stirring often until spinach is tender about 3 minutes. Sprinkle cornstarch over spinach and cook and stir until combined. Cook until liquid has thickened about 1 minute. Remove from heat . Add yogurt and stir to coat the spinach. Check taste and add salt and pepper if needed and serve.
