1 8 oz. can pineapple chunks (juice pack)
2 cups shredded cabbage
2/3 cup chopped apple
1/2 cup shredded carrot
1/4 cup chopped green pepper
1-1/2 T. cooking oil
1-1/2 T. honey
1-1/2 T. lemon juice
1/8 tsp. ground ginger
1/8 tsp. salt

Directions:
Directions:
Drain pineapple chunks, reserving 3 T. juice. Set aside juice. For salad, combine cabbage, apple, carrot, and green pepper. For dressing, in a screw-top jar combine reserved pineapple juice, oil, honey, lemon juice, ginger, and salt. Cover and shake well to mix. Pour dressing over salad. Toss lightly to coat. Chill at least 4 hours. Add pineapple chunks and toss before serving. Serve with a slotted spoon. Makes 4 servings.
