Cake:
¾ c dates
¾ c water
1 egg
1 c white sugar
¾ c vegetable oil
1½ tsp vanilla extract
1½ c flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ c chopped nuts

Icing:
3 tbsp butter (melted)
½ c brown sugar
½ c grated coconut
½ c table cream

Directions:
Directions:
Soak dates in water and cook for several minutes until soft. Do not drain.
Beat egg and add white sugar, oil, and vanilla.
Sift together flour, baking soda, baking powder, and salt.
Mix into egg mixture, alternatively mixing in dry ingredients and dates with water.

Bake in a greased and floured cake pan and bake at 325ºF for 50-55min

To make the icing, combine all ingredients and stir until the mixture becomes smooth. Pour over baked cake and broil in the oven until the coconut browns.
