1 small butternut squash
2 green apples (diced)
1 medium onion (diced)
pinch rosemary
pinch marjoram
4 c chicken broth
2 slices white bread (trimmed and cubed)
1½ tsp salt
¼ tsp pepper
2 egg yolks
¼ c heavy cream

Directions:
Directions:
Cut squash in half and remove seeds. Combine squash, apples, onion, herbs, broth, bread, salt, and pepper in a saucepan. Bring to a boil and simmer uncovered for 30-45min. Scoop flesh from squash and return to saucepan, discard skins. With an immersion blender, purée until smooth.

In a small bowl, beat together egg yolks and cream. Beat into a little of the hot soup, then stir into the saucepan. Heat, do not boil, and serve.
