1 Tbsp extra-virgin olive oil
1 1/2 Tbsp paprika
1/2 tsp cinnamon
1/2 tsp cayenne
1 1/2 tsp salt
1 tsp pepper

1 3 1/2 lb whole chicken (cut into serving pieces)
1 sweet onion(cut into 1/2-inch wedges)

Preheat oven to 500° with rack in upper third.

1. Mix oil with spices, salt, and pepper in a large bowl.

2. Add chicken and onion, tossing to coat.

3. Arrange chicken, skin side up, and onion in a 3-quart shallow baking dish.

4.. Bake until chicken is just cooked through and skin is golden, about 30 minutes.

5. Skim any fat from pan juices in dish.

Makes 4-6 servings
