2 cups sugar
1 cup milk
1 pinch salt
1 tbl. butter
½ cup peanut butter (smooth or crunchy)

Mix together sugar, milk and salt. Cook in a pan on stovetop, stirring constantly, until a small amount of mixture dropped into a cup of cold water forms a soft ball. (Soft ball stage of candy making: This stage can be determined by dropping a spoonful of hot mixture into a bowl of very cold water. In the water, use your fingers to gather the cooled syrup into a ball. If it has reached soft-ball stage, the syrup easily forms a ball while in the cold water, but flattens once removed from the water.) If using a candy thermometer the mixture should reach 235 - 240º F.

Once the mixture has reached soft ball stage, add butter and peanut butter. Mix thoroughly. Pour into a buttered 8 X 8 or 9 X 9 inch pan. Cool, slice into squares, and serve.

Peanut Butter Fudge was a special treat my grandmother prepared at Christmas along with chocolate fudge (see Fantasy Fudge recipe), cookies, pies and other goodies. Christmas at Grandma's house was always a delight. I have many fond memories of food, family and fun.
