1 1/2 cups Chicken Broth
1 cup raisins or cranberry raisins
3/4 tsp cumin
2 tsp curry

1 cup couscous

Grated rind of 1 lemon
2 Tbsp lemon juice
1/3 cup olive oil

1/4 cup chopped candied ginger
1/2 cup thinly sliced green onions and/or chopped cilantro
1/2 cup toasted sliced almonds or pistachios

Directions:

Boil the chicken broth, raisins, cumin, and curry together in a 2 Qt Saucepan

Remove from heat and add couscous. Cover and let sit for 5 minutes.

Add lemon juice, lemon rind, and olive oil and blend into couscous until thoroughly mixed.

Mix in the remaining ingredients - candied ginger, green onions/cilantro, almonds/pistachios.

Makes 4-6 servings.
