4 chicken breast, cut into small bite size pieces
2 tbsp. vegetable oil
2 cup each of broccoli florets, cauliflowerets, and carrot pieces OR 1 bag of frozen stir fry vegetables
1 c. chopped onion (optional)
3 tbsp. cornstarch
¼ c. cold water
2 c. chicken broth
¼ c. teriyaki sauce
¼ c. soy sauce
½ tsp pepper
½ tsp. ground ginger
1 garlic clove, minced or 1 tsp garlic powder

Directions:
Directions:
In a large skillet, stir fry chicken in oil over medium high heat for 10 minutes or until juices run clear. Remove chicken and set aside.
In the same skillet, stir fry the vegetables and onions for 5-8 minutes until tender. Combine the cornstarch and water until smooth. Add the remaining ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened. Return chicken to skillet and heat through. Serve over Rice.
