Mom's Potato soup Recipe

3 medium yukon gold potatoes, peeled & diced
1/2 to 1 cup onion, coarsely chopped
4 TB butter, divided
1/4 to 1/2 tsp garlic powder, to taste
2 cups milk
Salt & pepper to taste
3/4 cup Colby Jack cheese, shredded

Directions:
Directions:
1) Cover diced potatoes & onions with water, till barely covered.
2) Add the garlic powder & 2 TB butter.
3) Cook on high heat in medium saucepan. Boil uncovered,until water is nearly gone (approx. 15 min)
4) Add the milk & remaining butter.
5) Add salt & pepper as desired.
6) Cook until heated through.
7) Stir in the Colby Jack cheese until melted. Serve.

Dumplings for the soup (optional)
2 eggs, beaten
Salt & pepper to taste
Pinch of garlic powder
Pinch of onion powder
* Mix above ingredients together with a fork.
Add flour till dough is no longer sticky, but still soft.
Pinch off 1/2 inch pieces of dough & drop into water as soon as the onions/potatoes start to boil.
Continue cooking as instructed in soup recipe above.
