2 T Olive Oil
3 cloves Garlic, minced
1 large Onion, diced
1 lb Italian Sausage
1 lb Ground Beef
1 can (28 oz) whole Tomatoes with juice
2 cans (14.5 oz) Tomato Sauce or Marinara Sauce
2 t. Italian Seasoning
1/2 t. Red Pepper Flakes
Salt & Pepper to taste
16 oz Ziti or Mostacioli
1 tub (15 ox) Whole Milk Ricotta Cheese
1 & 1/2 lb Mozzarella Cheese
1/2 cup grated Parmesan Cheese
1 Whole Egg
Freshly Minced Parsley

Directions:

Heat Olive Oil in a pot over medium heat. Add onions & garlic and saute. Add Italian Sausage & Ground Beef & cook until browned. Drain off fat, leaving a bit behind for flavor & moisture.

Add tomatoes, tomato juice, salt, pepper, Italian seasoning & red pepper flakes. Stir & simmer for 25-30 minutes. After that time remove 3-4 cups of the sauce to a different bowl to cool down.

Preheat oven to 375º.

In a separate bowl, mix together the Ricotta Cheese, 2 cups of grated Mozzarella, Parmesan, egg, salt & pepper. Stir together just a couple of times (do not mix completely).

Drain the pasta & rinse under cool water to stop the cooking and cool it down, Pour it into the bowl with the cheese mixture & toss slightly (there should be large lumps). Add the cooked meat sauce & toss to combine.

Add half the coated pasta to a large casserole dish or lasagna dish. Spoon 1/2 of the remaining sauce over the top, then top with 1/2 the remaining Mozzarella cheese. Repeat with another layer pasta, sauce & cheese.

Bake for 20 minutes or until bubbling. Remove from the oven & let stand 5 minutes.
Sprinkle chopped parsley over the pasta before serving.

I woke up this morning with a little worry about how I was going to make all of the things happen today that I needed to make happen! I wasn't sure how all the pieces of a full day were going to come together! I committed it to the Lord and He was faithful! He is always faithful!
I told a lady at church that I'm a "day by day-er"! I don't look ahead much (at all) because each day seems full enough as it is! Casey encouraged me after church that the Word says, "Therefore do not worry about tomorrow, for tomorrow will worry about itself. Each day has enough trouble of its own." Matthew 6:34. I trusted Him with today and He provided all I needed! I'm confident He will do the same tomorrow! Whatever tomorrow brings! My confidence is in the Lord and He will do it again. ~ Connie
