1 package (16 oz) fresh black eyed peas
1 quart chicken broth
Can diced tomatoes
2 carrots peeled and chopped
1 cup minced smoked ham
2 stalks celery chopped
2 cloves minced garlic
1 cup red wine
salt and pepper
Can crushed tomatoes

Directions:
Directions:
Cook peas in stock according to package directions.

Saute diced tomatoes, carrots, ham, celery and garlic. If you have rosemary olive oil, use that for the saute. Add sauteed veggies to peas and broth. Add wine, salt and pepper. Simmer 30 minutes. Add crushed tomatoes and heat another 10 minutes.
