2½ - 3 cups flour
1 tsp sugar
1 tsp salt
2 Tbsp olive oil
1 envelope quick rise yeast
1 c very warm water

Directions:
Directions:
Sprinkle yeast into water in a small bowl; stir to dissolve. Let stand for about 5 minutes. Blend flour, 1 Tbsp olive oil, sugar and salt in a large bowl. Add yeast water to about 2½ cups of the flour mixture. Stir well with a fork.

Dust hands with flour an knead the dough, adding more flour until the mixture isn't sticky. Roll into two balls.

Wipe remaining olive oil on two pizza bricks. Sprinkle bricks with corn meal. Roll each dough ball out onto pizza bricks, using hands and/or rolling pin. Stretch very thin, rolling edges.

Top with whatever you like! Pesto sauce (can use store-bought pesto), rotisserie chicken, fresh roma tomatoes, artichoke hearts and cheese is a good combination.

Bake at 425º for 10 minutes or more, depending on toppings.
