16oz. Ricotta (Galbani, preferably)
10oz. Mozzarella, shredded (divided, 8 & 2)
1 egg
¼ cup Grated Parmesan/Romano, plus some extra for finishing
1 tsp. sugar
1 tsp. oregano
1 tsp. basil
1 tsp. parsley
salt and pepper to taste
1 Package Shells
Sauce

Directions:
Directions:
Boil water and cook 15-18 shells per package directions (12 mins or so, al dente). Drain.
In a bowl combine the ricotta, 8 oz. shredded mozzarella, egg (beaten well), ¼ cup grated parmesan, and the basil, oregano, and parsley. Mix well using hands.
Once the shells cool, put some cheese mixture in each shell.
Line the bottom of a baking dish with sauce, and lay the stuffed shells in the dish.
Cover the shells with more sauce, mozzarella, and grated parmesan.
Bake at 350ºF covered for 30-35 minutes.
Uncover and cook for a few minutes more.

This is Mom's recipe we grew up on. When I was working at the restaurant in Florida, we sold, "Nancy's Stuffed Shells" as a weekly special. The mixture also works for lasagna, just double the batch.
