1 cup flaked coconut

3 cups half and half

2 eggs

3/4 cup sugar

1-/1/2 cup flour

1/4 teaspoon salt

1 teaspoon vanilla extract

1 9-inch pie crust

1 cup whipped cream

Directions:
Directions:
Mix flour, sugar, salt in medium sauce pan slowly stir in milk.
Cook over boiling water stirring constantly until thick enough to stick to spoon. Cover and cook for 10 min longer stirring constantly.
Stir a little hot mixture into egg yolks then stir all into remaining hot mixture cook 2 min stirring.
Remove from boiling water stir in vanilla and 3/4 cup coconut. cool to room temp. put in pastry shell.
Put whipped cream on top of filling.
Sprinkle 1/4 cup coconut on top.
Bake for 5 min. at 425°
