1lb. pasta - Rotini or Penne
2 16 oz. cans diced tomatoes w/basil and oregano
1 lb. Italian chicken sausage
10 oz. bag of fresh baby spinach
1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
1 cup shredded mozzarella cheese
Parmesan Cheese

Boil water for pasta. While water is boiling, remove sausage from casings. Chop up sausage and brown in large skillet. Drain any excess oil. Add tomatoes to skillet and stir. Add bag of spinach to sausage and tomatoes until spinach wilts. When water is boiling, cook pasta al dente.
Once pasta is cooked, drain and add to the skillet and mix thoroughly. Add 1 cup shredded mozzarella cheese.

Transfer to a large heated bowl and serve immediately with additional parmesan cheese.

Tracy Hosmer made this for our family after we had learned that Dad had died. The recipe was called Tomato and Spinach Pasta Toss. I made it during one of my visits to see Mom while she was living with Mike and Jane in Clifton. The pasta looked so pretty when it was put into the bowl that Justin looked at it and called it "Aunt Pattie's Pretty Pasta". It tastes just as good as it looks!
