2 Bags of Raw Peanuts with or without skins (14 oz each)
1/4 cup Sugar
1/4 cup Salt
10 Star Anise
2 cups Water

Directions:

1. Put all the ingredients except peanuts in a pot and bring the liquid to a boil. Simmer for 10 minutes or until sugar is dissolved.

2. Add peanuts and bring it up to a boil.

3. Simmer for 5 minutes

4. Drain well

5. Spread peanuts evenly on a cookie sheet (one layer)

6. Preheat oven to 230º F

7. Roast peanuts for 2 more hours (more if they are not crispy enough)

8. Turn off oven and let peanuts cool inside the oven.
