3/4 cup coconut oil
1/2 cup granulated sugar
1 cup light brown sugar
3 eggs
2 teaspoons pure vanilla extract
3 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
2 cups semi-sweet chocolate chips (dairy free)

Directions:

1. Preheat oven to 350º Line two baking sheets with silpat baking liners
2. Combine flour, baking soda, and salt in a medium bowl. Stir and set aside.
3. Stir together oils and sugars.
4. Turn mixer (with butter mixture bowl attached) on low. Add eggs, one at a time, mixing completely. Mix in vanilla extract. Add flour mixture to the wet ingredients and mix until combined. Add chocolate chips and stir to combine.
5. Drop by tablespoons on prepared cookie sheets. Bake for 8-9 minutes. Let cool for 5 minutes, and then remove from pans to cool completely.
