6 large baked potatoes cooled but not cold, peeled and cubed
⅔ cup butter
⅔ cup flour
⅔ tsp. salt
¼ tea. pepper
2 cups chicken broth
4 cups Half and Half
1 cup sour cream
¼ cup thinly sliced green onion
8 strips bacon cooked and crumbled
2 cups shredded cheddar cheese divided

Peel and cube potatoes. In Dutch oven melt butter over medium heat, stir in the flour,, salt and pepper. Stir until smooth. Gradually add half and half and chicken broth. Bring to a boil, stir and cook 2 minutes or until thickened. Remove from heat and whisk in sour cream and 1 cup of cheddar cheese. Stir until cheese melts in soup. Add potatoes, bacon and onions. Garnish with remaining cheese, Serve hot. Cook time 1 hour and 30 minutes.
