2-4 pound beef chuck roast
1/2 cup flour
2 pods fresh garlic or 2 tsp minced garlic
Salt and pepper to taste
2 cups Whole baby carrots or sliced peeled raw carrots
1 cup fresh sliced mushrooms - optional
8 small to medium white potatoes
2 medium onions sliced
1 cup red wine or beef broth

Coat roast with flour , salt , and pepper. Insert garlic pods in middle of roast . Sear roast on stovetop using suitable pan. ( Some slow cooker pans allow for stovetop use - check first). Place onion slices in bottom of slow cooker pan. Place seared roast on top of onions in crockpot. If you are using minced garlic, place on top of roast. Pour liquid over roast. Cover and cook on low for 4 hours or on high for 3 hours. Add raw vegetables on top of roast and cook another 4 hours on low or 3 hours on high or until roast and vegetables are tender. May add more liquid if necessary for more gravy..

NOTE : Roast should come apart with a fork and vegetables should be tender but not mushy or falling apart.

Traditional Family Recipe This is another frequently requested family favorite. It can serve up to 12 people if the roast is close to 5 pounds. You will have to add more vegetables and additional seasoning and liquid as well as cook a little longer. You can opt to cook only the roast without additional carrots, potatoes, and mushrooms, put the slow cooker on low and leave for the day. Great for working mothers!
