2 avocados - peeled, pitted, and diced
1 large ripe tomato, chopped
1/2 cup sweet onion, chopped
1/2 cup black beans, drained and rinsed
1/4 cup chopped fresh cilantro
1 lime, juiced
1 clove minced garlic
salt & pepper to taste

2 tbsp. olive oil (if desired, I don't use)

Directions:

In a medium bowl, combine all ingredients and gently toss til everything is coated. Serve immediately or cover with plastic wrap for up to 12 hours.
