2 tablespoons and 2 teaspoons margarine divided
1 tablespoon and 1 teaspoon of sugar divided
2 large eggs
1/2 cup milk
1/2 cup orange juice
Teaspoon of orange peel
4 slices of raisin bread ( cut 1/2 inch cubes)

Preheat oven 350
Mix in medium bowl use electric mixer on medium speed (1 tablespoon margarine and 2 teaspoons sugar combined) add egg yolk beat until fluffy. Add milk, juice, and orange peel, beat on low speed (mixture looks grainy). Stir in bread cubes and let stand 15 minutes then stir mixture together.

Grease a 9x12 glass dish with 2 teaspoon of margarine.

In a medium mixing bowl use clean beaters, beat egg whites at high speed until soft peaks form. Add remaining sugar. beat till stiff peaks form. Add to the bread mixture. Fold mixture in greased glass bowl. Bake 30 minutes or until pudding is puffed and brown. Let stand a few minutes before serving.
