½ lb. flank stack
2 tbsp. oyster sauce
1 tsp. sugar
1 cup water
2 slices of ginger root
2 tbsp. dry sherry
3 tbsp. corn starch mixed with 3 tbsp. water

Directions:
Directions:
slice steak with the grain into 2 inch pieces, then across the grain into 1/8 inch slices.Mix oyster sauce, pepper, sugar and water. Using a high flame, heat a wok with a little peanut oil, add meat and then add ginger root. Stir fry for 1 minute, at the same time sprinkling sherry over the meat. Add water mixture, cook and stir until it comes to a boil. Add cornstarch paste and cook and stir for 1/2 minute.

Sprinkle chopped scallions over the top just before serving.
