Thick cut pork chops - butterflied
Bacon
Sliced Ham - Lunch meat
Cheese - your choice chunked to fit into pork chop
Herbs - rosemary, sage, dill (if using dried, Grind or crush with mortar and pestle)
Garlic - minced
Salt & Pepper - to taste
Dark Brown Sugar

Prep all your ingredients

Place butterflied pork chops opened onto your cutting board
Sprinkle a pinch or two of the herb mixture onto the opened pork chop
Lightly dust with salt & pepper
Set pork chops aside

Take a slice of ham & place a chunk of cheese in the center & wrap it up
Flip it over (so the end is on the bottom) & wrap it in another piece of ham
Place this onto one side of the butterflied pork chop & pull the other side over
Wrap the pork chops in bacon slices making sure to seal all the edges of the pork chop with bacon keeping all the ends on the bottom (3-4 pcs of bacon per chop)
Place on tray

Sprinkle the top with some herb mixture, salt & pepper, & brown sugar

Bake at 375º F & bake for 35 - 45 min or untill internal temp reaches 150º-160º

I was trying to use up the extra food that came home with me from pennsic this year & this was one of my best creations out of what I had left over. The pork chops where the only thing I actually bought.

I didnt include any ingredient measurements for this because it's mostly a pinch here & a pinch there & will vary depending on how many chops your doing & most of it is a pinch here & a couple pinches there...

I used block cheddar cheese because that's what I had, but any block cheese would work. It would be very easy to alter this recipe to completely change the dish.. next time I'm going to try stuffing the pork with a fruit (apple or pineapple maybe) wrapped in ham & changing up the herbs to something like cinnamon, nutmeg or allspice) for a good fall dish
