1 Kabocha Squash (Kaddu)

2 peices thigh chicken


1/4 onion
1 clove garlic
fingernail ginger

Water 1 cup (as needed)
1 T. Coconut Oil
1/8 t.Fenugreek Seeds
1 dry red chile

1/4 t. Turmeric Powder
2 t. Dry Mango Powder
1 t. Jaggery Powder or to taste
1 t. Coriander Powder
Stem of cilantro on the top
Salt to taste

1. Peel cut the Squash into cubes and steam it 20 minutes
2. Mush it in a blender
3. Cut small pieces of onion, garlic and ginger, and then blender in little peices. Once done, in a separate pan, 4. Heat Oil on medium heat and add the Fenugreek Seeds & Dry Red Chillies.
5. Allow the Methi Dana to brown and the Dry Red Chillies to change color and get a little smokey.
6. Add in Turmeric Powder and mix in with Oil and add in the Kaddu
7. Saute chicken (20 minutes medium or low medium)
8. Add in the dry spices now: Dry Mango Powder, Jaggery Powder, Coriander Powder
9. Add onion paste
10.Add Squash
11. Add salt and cilantro on top
12. Serve in a shallow bowl
13. Puris or Paratha on the side
