8 Chicken pieces
1/2 Cup Rice flour, plus some for sprinkling
1/2 Tsp Kosher salt
1/4 Tsp Pepper
Vegetable oil for frying
1/4 Cup all purpose flour
3/4 Cup water

Directions:
Directions:
1. In a large bowl, sprinkle with flour, salt & pepper, tossing to cover
2. Heat oil at a depth of about 2 inches
3. Place over medium heat to about 350º
4. Whisk together both flours, salt and pepper.
5. Whisk in water to a thin batter
6. Working in batches, dip pieces in batter, allowing batter to drip off
7. Transfer to oil for 6 minutes
8. Remove, shake and place in colander
9. Transfer to paper towels
10. Bring oil back to 350º
11. Return chicken to oil until golden brown or registers to 160º
12. Transfer to wire rack over baking sheet and sprinkle with flaky salt
