2 pounds of ground beef
1 small onion (diced)
2 cups of water
1 can Rotel tomatoes
1 can kidney beans (drained)
1 can diced tomatoes
1 can of corn (drained)
1 package dry taco seasoning
1 package dry ranch dressing mix
sour cream for serving
shredded cheese for serving
tortilla chips for serving
Directions:
Directions:
Brown the ground beef and diced onion in a skillet and drain off the fat. Put ground beef into a big soup pot. Add the water and stir before adding other ingredients. Add remaining ingredients, stir, and bring to a boil. Reduce heat and simmer for 20-30 minutes, stirring occasionally. When serving, top with sour cream and shredded cheese. Use tortilla chips as a scoop if desired.
