12 medium hard shell clams shucked (you can get them steamed in the supermarket at the seafood counter
3 or 4 slices of bacon
3 tablespoons butter
2 tablespoons minced scallion
1 tablespoon minced bottled roasted red peppers
2 tablespoons minced fresh coriander
tabasco to taste
Lemon juice to taste
Salt and pepper to taste

Directions:
In a skillet cook the bacon over moderate heat turning it once, until it is golden, but still soft.
Transfer to paper towels to drain and reserve it.
In a small bowl, stir together the butter, the scallion, the roaster pepper, the coriander the tobacco and the salt and pepper to taste.
Arrange clams in a baking pan just large enough to hold them.
Layer and divide butter mixture among clams.
Sprinkle clams with lemon juice and top each clam with a piece of bacon.
Bake clams in the middle of a preheated 450 degree oven for 10 minutes.
