1 lb. fresh ground turkey.
2 cups oatmeal, uncooked.
1 cup of shredded Parmesan cheese.
1-2 cups of spaghetti sauce.
1 package of meatball seasoning mix
1 cup of water.
1 small onion
1 bell pepper (any color)
Any frozen veggies you might like

Get 1 lb. of fresh ground turkey. Fresh works better than frozen. Put in large mixing bowl. Add about an equal amount of oatmeal, uncooked. Add a handful of shredded Parmesan cheese. The stuff you buy in a big bottle at Costco works great. Anything else is OK too. Put in a cup or two of spaghetti sauce. Whatever you have in the cupboard is OK. Add a package of meatball seasoning mix (store bought). Add maybe a cup of water; don't make it too loose. Throw in whatever vegetable you want; frozen corn is great, as are peas. I usually chop some onion and put that in there too. Bell pepper also.
Moosh it all together and put it into a bread pan. Bake covered at 350 for an hour. If still pink, give it another 15 minutes. If making meatballs, round up and put in greased frying pan.

Sometimes you want to make something fast that can be just as good as a leftover as on the first day. This turkey loaf fills the bill. I've used it for sandwiches, burrito filling, meatballs on pasta, whatever. Simple to make, easy to enjoy.
