Ingredients: 1 lb. fresh ground turkey. 2 cups oatmeal, uncooked. 1 cup of shredded Parmesan cheese. 1-2 cups of spaghetti sauce. 1 package of meatball seasoning mix 1 cup of water. 1 small onion 1 bell pepper (any color) Any frozen veggies you might like

Directions:Get 1 lb. of fresh ground turkey. Fresh works better than frozen. Put in large mixing bowl. Add about an equal amount of oatmeal, uncooked. Add a handful of shredded Parmesan cheese. The stuff you buy in a big bottle at Costco works great. Anything else is OK too. Put in a cup or two of spaghetti sauce. Whatever you have in the cupboard is OK. Add a package of meatball seasoning mix (store bought). Add maybe a cup of water; don't make it too loose. Throw in whatever vegetable you want; frozen corn is great, as are peas. I usually chop some onion and put that in there too. Bell pepper also. Moosh it all together and put it into a bread pan. Bake covered at 350 for an hour. If still pink, give it another 15 minutes. If making meatballs, round up and put in greased frying pan. |

Notes: Sometimes you want to make something fast that can be just as good as a leftover as on the first day. This turkey loaf fills the bill. I've used it for sandwiches, burrito filling, meatballs on pasta, whatever. Simple to make, easy to enjoy.
