Glaze:
1” Piece Ginger, peeled and minced
2 Tbsp. Dijon Mustard
1/4 c. Soy Sauce
1/4 c. Light Brown Sugar

2 lbs. Boneless Pork Loin, trimmed
Kosher Salt and Freshly Ground Black Pepper to taste

Preheat oven to 450 Degrees.

Place pork loin on a baking in a baking sheet.

For Glaze:
In small saucepan over medium-high heat, add soy sauce, mustard, light brown sugar and ginger and whisk to combine. Bring to boil and reduce to simmer. Reduce until mixture has thickened to glaze, about 5 minutes.

Pat pork loin dry and season with salt and pepper. Place on the baking rack. Brush top of loin with glaze and place in oven. Cook for 15 minutes, flipping loin halfway through and brushing with glaze. Turn oven down to 300ºF and cook until internal temperature reaches 135ºF-140ºF, about 40-45 minutes. Ten minutes before pork is finished cooking, brush with glaze once more. Remove from oven and allow to rest for at least 10 minutes. Slice into 1/2-inch thick medallions (slices).
