3 to 4 med. Zucchini, sliced
3 to 4 oz. Cream Cheese (Regular or Low-Fat)
1 Egg, well beaten
2 to 3 Tbsp. Butter or Margarin
2 to 3 Tbsp. Onion, chopped or 1 Tbsp.dried onion flakes.
12 to 15 Ritz crackers (Optional) Smashed for topping

Directions:

Preheat Oven to 325 º F. Butter 9 x 13 casserole dish

Cook zucchini until tender . (Microwave is fine for this). Drain off liquid and mash the zucchini. Add the onions, sour cream and egg and mix until blended. Pour into buttered baking dish.

Combine the cracker crumbs with a small amount of butter, then sprinkle over the zucchini mixture.

Bake for 20-15 minutes (until set).

This is one of our favorite recipes. Pete Dayton, a neighbor in Huntington Beach gave it to us. I do not make it with crackers! It is not necessary, and saves calories too.
