1 whole chicken, stewed (6 boneless breasts can be substituted)
1 pkg. (12 oz.) spaghetti
1 stick butter
1 bell pepper, chopped
1 onion, chopped
1 lb. Velvetta cheese
8 oz. mushrooms
1/2 C. flour
1 pint milk
Salt, pepper and garlic powder to taste

Stew chicken with salt and pepper. Save 1 quart of chicken broth. chop chicken into small pieces. In a large skillet, melt margarine, onions, and bell pepper. Sauté until soft. blend in the flour and gradually add milk and mushrooms. Stir until thickened. Add cheese (save some for the top of casserole). cook spaghetti in chicken broth for 10 minutes. combine spaghetti and sauce and pour into 9 x 13 pan. Bake at 350º for 25-30 minutes.

Memama always had this ready for us to eat when we arrived in Grapeland on Friday nights. It was always accompanied with lots of desserts in the dining room.
