3 medium sweet potatoes (see picture)
1/2 cup water
1/2 cup sugar
2 1/2 tablespoons real butter (no substitute)

Peel potatoes, wash potatoes over cold running water, then slice them vertically (see the picture) and cook as directed below.

Cook in a 2 or 3 quart sauce pan.

Cook sweet potatoes and other ingredients on high heat then reduce heat to medium heat, watch carefully to prevent sticking or scorching.

Let water reduce until it's syrupy. Enjoy. Serves 4 or 5.

Do not add any spices, just enjoy the natural flavor of the sweet potatoes.

My mother was raised in the country; and of course, on the farm, they grew their own vegetables. Sweet potatoes was one of her favorite vegetable. She said her lunch at school was often a baked sweet potato in the jacket (skin) from home. She graduated from Dunbar High School in Mayfield, Kentucky. The school is no longer in existence. She said her school was very strict and had a very strict dress code, and the students obeyed and did what their teachers required of them.
