1 1/4 cups all purpose flour
1/4 pound butter
1/4 tsp. salt
1 egg yolk
1 tsp cider vinegar
1 tbsp cold water

Directions:
Directions:
Place flour, butter and salt in a mixing bowl and cut with a pastry blender until mixture is the consistency of oatmeal. Beat together until blended the egg yolk, vinegar and water and pour over the dry ingredients. Mix until blended and press into a ball. Chill 15 minutes. Roll out on a lightly floured board into a 13 inch round circle. Place pastry round in a 9-inch pie pan, press lightly against the sides and flute the edges. Prick bottom about a dozen times with a fork. chill to firm, about 15 minutes. Line pastry with foil and fill with dry beans. Prebake in a 400 degree oven for 8 minutes to set pastry. Remove beans and foil and bake 2 minutes longer. Remove from oven and allow to cool before filling
