1 pastry shell
1/2 lb. mushrooms, sliced (approx 2 cups)
3 green onions (use only half of the green tops) chopped
4 tablespoon butter
4 eggs
1 cup milk
1/2 tsp shredded Gruyere or Swiss Cheese
3 tablespoons grated Parmesan cheese

Directions:
Saute mushrooms and onions in 3 tbsp of the butter just until glazed; remove from pan. Beat eggs until light and mix in milk, salt, tarragon, sauteed mushrooms and shredded cheese. pour into the pastry lined pan, dot with remaining butter and sprinkle with the Parmesan cheese. Bake in a 425º oven for 10 minutes, reduce heat to 350º and bake 30 minutes longer or until set. Let cool 10 minutes. Cut into wedges and serve

This is an old recipe I have from a cooking class I took many years ago. Eidel and I made it and really enjoyed the meal. Its fairly simple to make, and makes a great breakfast, lunch, or dinner
