8 wonton wrappers
¾ cup part-skim ricotta
2-4 tsp. granulated sugar
½ tsp. cinnamon
½ tsp. cocoa powder+ extra for garnish
¼ tsp. vanilla extract
2 Tbsp. hopped dark chocolate + extra for garnish
Confectioner's sugar for garnish
Fresh strawberries for garnish

Preheat oven to 350º. Lay the wonton wrappers on work surface. With a damp paper towel or pastry brush , wet one edge of wrapper & fold over to other edge to form cylinder. Press the edges together & stand upright on a baking sheet. Bake until golden brown, about 10 min. Allow to cool for 2 min. before removing from pan, then cool completely. Place ricotta & sugar in bowl and mix on high for 3 or 4 min. Beat in cinnamon, cocoa & vanilla. Stir in the 2 Tbsp. of chocolate. Fill pastry bag with mix & pipe into the cooled rolls. Place each roll on serving plate, dust with 10X sugar & then a little cocoa powder. Sprinkle chocolate around plate & place a fanned strawberry or two next to the ricotta roll.
