1/4 cup Soften Butter
3 Beaten Eggs (save a little of the egg white to use for glazing before baking)
1 cup Sugar
2 tsp Vanilla Extract
1/2 tsp Salt
2 tsp Baking Powder
1 cup Dried Cranberry
1 cup Chopped Pecans (or Walnuts)
3 cups Flour

Directions:
Directions:
Preheat Oven to 350º

1. Combine soften butter, eggs, and vanilla extract and set aside
2. Combine salt, baking powder, and flour and sift together
3. Gradually add number 1 to number 2, then add cranberry and chopped nuts.

4. Turn the dough on a flour board and knead the dought seven to eight times. Divide the dough into two equal loaves and shape each into a biscotti shaped loaf.

5. Flatten each loaf into approximately 1 inch thickness and brush top of the loaf with egg white that was saved and sprinkled with sugar on top.

Bake at 350º oven for 15-20 minutes. Remove the loaves and allow to cool for 10 minutes.

Cut each loaf into approximately 3/4 to 1 inch slices.

Reduce oven heat to 325º and bake again for 15-20 minutes.
