1 lb. elbow macaroni, cooked al dente
1 8oz. block of sharp cheddar cheese, grated
1 8oz. block of Monterey Jack cheese, grated
1 stick butter
1 5oz. can of evaporated milk

Mix cooked macaroni, cheese, butter and evaporated milk. Pour into a 13 x 9 baking dish and bake at 350º for 35-40 minutes or until top begins to brown,

I encountered this very easy mac and cheese recipe while judging a cooking contest in a Culinary Arts class in the high school where I taught. Other variations were delicious and more complex but I liked the simplicity of this dish. I have modified it by adding veggies, using Pepper Jack cheese, spicing it up with crushed red pepper, or adding a breadcrumb topping. The possibilities are endless. You can adjust the creaminess to your liking by decreasing the evaporated milk and/or cheeses.
