1 cup self risings corn meal
1/2 cup self rising flour
2 eggs
1 cup milk
2 tablespoons sour cream
1/2 cup sugar
1/4 cup oil or melt butter or margarine
1 cup whole kernel corn (drain)
1 cup shredded cheese
4 strips thick bacon cook and chopped
Red pepper flakes (you decide how much--pinch or dash or tablespoon)
1/4 cracklin (Optional--Usually found in Meat Department)

Directions:

Mix all ingredients together: meal, flour, sugar, eggs, sour cream, add corn, cheese, red pepper flakes, cracklin, oil.
Bake in a greased 9x9 pan (you can use a medium iron skillet).
Cook for 45 minutes until done.
