3 C. Macaroni (Cooked & Drained in Colander )
1 Tsp. Salt
2 C. Old Cheddar Grated
1 C. Another cheese like Mozzarella or Provolone ( usually use small pieces of left over cheeses)
1 C. Velveeta cut in small cubes
3 Tbsp. butter
2 Tbsp. flour
2-3 C. Milk
1Tbsp of mustard
Salt & Pepper to taste
Bread Crumbs (Sometimes I use leftover coating from Cheddar Baked Veggie Chicken which I save in the freezer)

Set Over to 375 º Melt butter in good sized pot, When starts to sizzle add flour (Medium Heat)
Spray a good size casserole dish with Pam (so it's easy to clean)
Use a whisk so not lumpy and mix to a rue consistency
Add milk and stir gently until thickening
Add cheeses
Add mustard
Add Salt & Pepper to taste
Turn heat down so sauce won't burn
Continue stirring until cheese has all melted
Add macaroni and fold in so it doesn't break up
Transfer to Casserole and sprinkle with topping
Bake until golden brown and serve. (About 30 minutes)
