1 lb. softened butter
1 cup fine granulated sugar
1 cup rice flour
4 cups cake flour

Directions:

Pre-heat oven to 350ºF. Mix ingredients together and spread in a jelly roll pan. Prick batter to bottom of pan when ready for the oven. Put in oven and immediately turn the temperature down to 300ºF. Bake for 50-60 minutes. DO NOT BROWN. Take out of oven and cut into small squares. TURN OVEN OFF. Return to oven for 10 minutes. Remove and let cool.

This is my Grandma Eliza Walker's recipe. She was my Mother's Mum. Grandma lived to be 103 and stayed in her own home until that day. As a child I would write her letters and I never forgot her address: Elvestham Cottage, Lechlade Rd. Farington, Berkshire, England. Houses didn't have numbers then. Each household had their own name, thus Elvestham Cottage. Once 100, she was very proud of her letter of congratulations from her Queen. Of course living so long gave her enough time to perfect her shortbread recipe. Enjoy!
