5 T. butter
⅔ cup diced onions
⅔ cup diced green peppers
1 cup chopped celery
6 cups chicken broth
1 bay leaf
1 cup diced tomatoes
⅛ tsp. cayenne pepper
½ tsp. gumbo filé
1 cup frozen cut okra
¼ tsp. garlic powder
¼ cup cornstarch
2 cups diced cooked chicken

Directions:

Place butter in a large saucepan over medium heat. Add diced onions, celery and peppers and cook until celery is tender. Add chopped tomatoes and bring mixture to a simmer. Add 5½ cups of broth, stir until blended and again bring to a simmer. Add remaining spices (bay leaf, cayenne and gumbo filé and garlic salt). Dissolve cornstarch in remaining ½ cup of broth and slowly add to saucepan stirring constantly. Add okra and simmer for 5 minutes. Add chicken and simmer an additional 5 minutes. Serve.

Believe it or not, there was a time when airlines used to serve actual meals on long flights. The wonderful smells would fill the cabin as the flight attendants heated the meals to serve. This recipe was printed on a little card that came with my lunch, compliments of USAir on one of our many trips. Neatly arranged on the tray was this soup in a covered soup bowl, a sandwich, an apple and a cookie, with REAL silverware. I had never had okra before, but I fell in love with it's silky feel in your mouth. The stewardess told me it's a natural thickener. I hope you'll give it a try. Easy and delicious.
