2½ cups oatmeal (long cook oats work best)
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
12 oz. Ghirardelli Chocolate Chips
4 oz. Ghirardelli Dark Chocolate Bar - finely grated
1½ cups chopped nuts - your choice

Measure oatmeal and blend to a fine powder. Cream the butter and both sugars. Add eggs and vanilla. Stir together. Mix in the flour, oatmeal, salt, baking powder and baking soda until well blended. Work in the chocolate chips, grated chocolate and nuts. Roll into 1 inch balls and place two inches apart on a cookie sheet lined with parchment paper.

Bake for 10 minutes at 375º F. Do not overbake. Remove from oven and let cool on cookie sheet for a few minutes, then slide parchment paper with cookies over to a cooling rack. They may seem too soft, but will firm up as they cool. Let cool completely.

I came up with this recipe after much experimentation with ingredients, and making other chip recipes that didn't turn out the way I would have liked. A little trick I've learned is to make a batch of these, roll all the dough into balls and place on a parchment paper lined cookie sheet and place it in the freezer until the cookies are frozen solid. Then remove and place in a ziplock gallon freezer storage bag. Bake whenever you want a few fresh cookies. Add a couple of minutes on to the bake time, unless you defrost them first. It's great for just having a few little treats and not having too many around as a temptation.
